Ingredients: 2 oz. Cyprus, cubed
10 oz. Romaine, roughly chopped
4 oz. grape tomatoes, halved
1 small cucumber, quartered
1 can chickpeas, drained and rinsed
3 T fresh lemon juice
1/3 cup extra virgin olive oil
1/8 tsp. dried oregano
1 garlic clove, minced
Salt and pepper to taste
Grilled pita Directions: Prepare vegetables as directed. Toss together in large salad bowl. In a small bowl, combine lemon juice, oregano, garlic, salt and pepper. Slowly drizzle olive oil into mixture while whisking. Add dressing to salad and toss to coat. Serve. |
