Asher Blue Pretzel Bites

Asher Blue Pretzel Bites

Difficulty level: Easy  


    • 1 lb soft pretzel dough or pizza dough
    • 1/4 cup baking soda 
    • 1 egg, beaten 
    • pretzel salt, for sprinkling
    • 1 stick butter, melted
    • 8 oz Sweet Grass Dairy Asher Blue, crumbled 
    • fresh thyme or parsley, for serving 
    • Optional: add some Thomasville Tomme to the top to have the pretzel bites hold better. 


  1. Cut the dough into roughly 34 bite-size pieces, cover, and let rest for 5-10 minutes
  2. Preheat the oven to 425°F.  Line a baking sheet with parchment paper. Bring a large pot of water to boil. 
  3. Add the baking soda to the boiling water. Boil the dough bites, 10 or so at a time, for 30 seconds. Remove with a slotted spoon, dropping each bite onto the parchment-lined baking sheet. 
  4. Arrange the bites on a greased 12-inch baking sheet. Brush the bites with the beaten egg, then evenly pour over the butter. Top with the crumbled Asher Blue. 
  5. Bake for 20-30 minutes or until pretzels are golden brown and the Asher Blue has melted. Finish with herbs and serve warm!
