Blackened Shrimp & Grits

Blackened Shrimp & Grits
Difficulty level: Easy
Ingredients:
Grits:
1 cup grits (we prefer Gayla's Grits)
2 cups chicken broth
2 cups milk
1 cup Georgia Gouda, shredded
2 tbsp butter
Shrimp:
1 lb shrimp
4 strips bacon
1 Tbsp cajun seasoning
1/2 Tbsp paprika
1/2 Tbsp garlic powder
1/2 Tbsp black pepper
2 cloves garlic
1 scallion
2 Tbsp chopped fresh parsley
Directions:
Grits:
Bring broth to a boil. Meanwhile, heat milk in the microwave (you don't want it to scorch in the bottom of the pan while bringing it to a boil).
Add milk and grits, reduce heat to low, and simmer for 20 minutes (or follow the instructions on the grits packaging). Stir occasionally.
Remove from heat, and stir in butter and shredded Georgia Gouda.
Shrimp:
Mix powdered seasonings, and sprinkle generously over both sides of the shrimp.
Fry Bacon, remove from pan.
Add Garlic, scallion, parsley, and shrimp to hot bacon grease. Cook until shrimp turn pink, about 2-3 minutes per side.
Serve over grits, sprinkle crumbled bacon on top.
