Green Hill & Pear Skewer Salad

Green Hill & Pear Salad Skewers

Difficulty level: Easy  

Ingredients:

    • 1 Green Hill
    • 2 pears
    • ~2 cups of baby arugula
    • ~1/4 cup raw walnuts, chopped 
    • Balsamic Glaze

Directions:

  1. Slice pears into quarters and remove seeds and stem. Cut quarters into roughly 1/2-inch cubes.
  2. Cut Green Hill into similar-sized, 1/2-inch cubes.
    TIP: Prepare these with Green Hill which has just been removed from the fridge. Also, we suggest leaving the rind on, so the cheese is easier to handle.  
  3. Take a small skewer and thread a piece of pear, a bundle of arugula, and then a piece of Green Hill onto it. Place the skewer on a serving platter and repeat until all of the Green Hill and pears are used up.
    TIP: fold the arugula in half to make it a smaller bundle.
  4. Gently press a few pieces of chopped walnuts onto the paste of the Green Hill so that they stick. Drizzle balsamic glaze over top of skewers and enjoy!
