Slice pears into quarters and remove seeds and stem. Cut quarters into roughly 1/2-inch cubes.
Cut Green Hill into similar-sized, 1/2-inch cubes.TIP: Prepare these with Green Hill which has just been removed from the fridge. Also, we suggest leaving the rind on, so the cheese is easier to handle.
Take a small skewer and thread a piece of pear, a bundle of arugula, and then a piece of Green Hill onto it. Place the skewer on a serving platter and repeat until all of the Green Hill and pears are used up.TIP:fold the arugula in half to make it a smaller bundle.
Gently press a few pieces of chopped walnuts onto the paste of the Green Hill so that they stick. Drizzle balsamic glaze over top of skewers and enjoy!
