Lay sliced bread out in opposing halves and top with a layer of Green Hill and then a layer of Thomasville Tomme.
Fold halves on top of each other to form a sandwich. If you are adding additional toppings, go ahead and add these now. Slightly push down on your sandwiches to solidify your ingredients to keep them from spilling out into the pan.
Coat each exterior side of the sandwich bread with a generous slather of either butter or mayonnaise. We prefer using mayonnaise to give it a great texture.
Heat a skillet over medium heat, and put two sandwiches down in the pan and let them sear until you get a beautiful golden crust--- start with lower heat if you are concerned about burning the bread-- and then flip to the other side and repeat.
Once you have a beautiful crust on both sides of your sandwich, transfer them to a baking sheet, and repeat with your remaining sandwiches.
Once you have all your sandwiches seared, you can put them in the oven for 10-15 minutes to heat all the way through.
Cut into one to check that your cheese is melted, if so, serve immediately. If not, put your sandwiches back in the oven for a few more minutes.
