Transfer room temperature Lil’ Moo to the bowl of a food processor.
Add one tablespoon of heavy whipping cream to the food processor.
Pulse food processor until cream has been incorporated and then run food processor for about a minute. The cheese should increase slightly in volume, and also develop a bit of a sheen.
Check out the texture; if you like it, stop there. If you want a lighter texture, repeat step 3 until you get the texture you like.
Transfer whipped Lil’ Moo to a pastry bag or a gallon sized zip lock bag. Cut one of the bottom corners of the bag to fit inside the cannoli shell.
Pick up one of the cannoli shells, put the filling bag about half way into the shell and squeeze filling to fill up roughly half of the shell. If you are adding toppings, allow a little extra to protrude from the shell itself.
Flip the cannoli shell around and fill the other side. Repeat until all shells are filled.
