Lil’ Moo Toast with Fresh Peach, Honey and Cinnamon
1 thick slice of great bread, whatever you prefer, we like pain de campagne or sourdough
2 oz Lil Moo cheese
1 ripe peach, cored and sliced
A little honey for drizzling
A pinch of cinnamon, we like Vietnamese or Saigon since it's really aromatic.
Tablespoon of butter
In a skillet large enough to hold your slice of bread, melt the butter over medium-low heat.
When butter is melted, add your slice of bread, press down gently so the bread picks up some of the butter, and then flip your slice over and swirl around the pan so the bread picks up the remaining butter on that side.
Toast the bread until it gets to the degree of brown you prefer and flip over and repeat. I like to do this on low heat so I have more control over the process and hopefully not burn the bread.
Once your bread is toasted, remove from the pan and let cool down slightly.
Once cool, spread your Lil Moo cheese on one side, layer your peach slices, and then drizzle with a little honey, and sprinkle with cinnamon.
