Mini Grilled Cheese Pesto Sandwiches

Mini Grilled Cheese Pesto Sandwiches  

Difficulty level: Easy  


    • 1 French baguette 
    • Mayonnaise or butter for crisping the bread
    • 10 ounces of Georgia Gouda, shredded 
    • homemade Pesto or 1 jar store bought 



    1. First, slice your baguette into thin slices. 
    2. Spread mayonnaise or butter on one side of each piece of bread. 
    3. Start shredding all of your Georgia Gouda and leave it to the side. 
    4. Spread a heaping tablespoon of pesto on one slice of bread and then add some of the shredded Georgia Gouda on top. (Do this on the opposite side of the mayonnaise/butter.)
    5. Add a slice of baguette to make a little sandwich with the mayonnaise/butter side facing outwards. 
    6. Heat a large pan on medium heat and wait a few minutes before adding the sandwiches.
    7. Add as many sandwiches that fit into your pan and cook on each side for 3-4 minutes or until the bread is golden and crispy.
    8. Serve hot with your favorite soup or on a platter as an appetizer!
