Spread mayonnaise or butter on one side of each piece of bread.
Start shredding all of your Georgia Gouda and leave it to the side.
Spread a heaping tablespoon of pesto on one slice of bread and then add some of the shredded Georgia Gouda on top. (Do this on the opposite side of the mayonnaise/butter.)
Add a slice of baguette to make a little sandwich with the mayonnaise/butter side facing outwards.
Heat a large pan on medium heat and wait a few minutes before adding the sandwiches.
Add as many sandwiches that fit into your pan and cook on each side for 3-4 minutes or until the bread is golden and crispy.
Serve hot with your favorite soup or on a platter as an appetizer!
