Georgia Gouda is a raw cow's milk cheese that is aged more than 60 days. This cheese has a deep yellow color, is very dense, yet creamy and has a little tart, tangy flavor at first which slowly fades to a smooth finish with some sweetness

A farmhouse table cheese named for our hometown, made in the style of a French (Pyrenees) Mountain Tomme. Released between 60-90 days, it is naturally rinded with a semi-soft texture and subtle grassy flavors.
Named after our Owner’s second son, Asher Blue has a natural rind and a creamy yet crumbly texture. This mild, raw milk blue has an earthy flavor with mild notes of cocoa on the finish.
Named after our Owner’s third son, Griffin is aged a minimum of 120 days, producing a crumbly texture and malty flavors. We took our Tomme recipe and adapted it to include soaking the curds in an entire keg of Terminus Porter from Gate City Brewing. This cheese contains wheat.
Pimento Cheese has been a magical comfort food for over a century in the South. Our Pimento cheese is a unique adaptation on the classic recipe which includes our very own Thomasville Tomme, mayonnaise, piquillo peppers and pimentón from Spain. This Southern classic has a slightly spicy, smoky flavor and a creamy, spreadable texture.
